So many expressed their appreciation for such a spirited and educational interview. When asked 'what can each of us do to make a difference?' my reply was: "Something I did several years ago was to give myself a one-week personal challenge. I took a look at how much food I was wasting at home, even by composting, and set-out to eliminate food waste there. So... for one week use what you have or purchase, all of the fresh items and all of the leftovers, before they spoil... and be sure to include leftovers from when you eat out. Then commit to another week and keep going. There are also many volunteer opportunities with the local 'pay-what-you-can' cafes in Denver, as well as places like Community Food Share. Check out food kitchens, churches, temples and more. If you're short on time or energy they can most likely use a monetary donation."
